Turkey soup.with leftover turkey

Boil the body of Turkey in water on low
Until meat falls off bones
Once cooled sift thru removing skin cartilage and bone carrots onion and celery should be soft from roasting cut up more if u like add corn
Boil egg noodle in separate pot add to a bowl of soup salt n pepper if needed Ken adds hot sauce

Lemon
Shredded onion Half cup mayo
Fresh Dethawed Ziploc of crab meat
Two pkg cream cheese room temp
Salt
Pepper
White whine one cup
Two tbl yellow mustard
Mix bake 350 30 min serve on bread
Reheat in oven

I brine the Turkey we deep fry in a cooler with cider salt fresh herbs and ice check everyday for two days

Chicken homemade enchilada sauce

But dried chili California peppars in Mexican food section
Remove stems and seeds cut up
Fry in oil with two cloves chopped garlic
Once browned
add can of chicken stock
Chop one.rip.tomato remove seeds
Add. To peppers
Simmer
Add pepper
Salt
Cumin
Corriander

Blend.in.blender to make.a.sauce
Meantime
Chop 1/4 onion
Half green and red.pepper one.Jalepeno stem and seeds removed
I.was told.the.skin holds the heat.some people say its all.in the seeds
You can.peel off some of the skins to make less hot but.gives good flavor

Pan fry in oil with.salt.and peppr to soften
Blend on blender to make a sauce.once onions begin to be clear
I.added a cup.of water chicken broth is best
Cook in pan boiling tear up a corn tortilla to thicken. I cut up two chicken breasts into the sauce then shredded
Microwave corn tortillas for about 40 sec in plasitc or.covered towel to make pliable then they won't crack when rolled
Shred mild cheddar cheese or.mexcian mix
Put.in each enchilada.cheese meat then roll tucking close in pan then cover with remaining sauce and cheese covering

Bake at 350 for 20 min until cheese is Brown
Top.with sour.cream

Chicken n waffles

I watched diners drive in n dives
They had a tailgate special
So I tried the breading
I pounded the chicken breasts in a large plastic sack to flatten after removing any tendon or fat
I dipped chicken in buttermilk then a flour cornstartch mix
With salt peppar
Cayenne
Red pepper flakes
Onion powder garlic powder
Maybe needed paprika?
Then I dipped in egg wash
Then covered in panko breadding
I let sit on meat this helps it not fall off
I heated Crisco to 350 degree f.
Then cooked each Peice until dark brown flipping on each side
I let set in oven to keep warm on a pan
I used the waffle recipe on bisquick
Two c bisquick
One n half cup buttermilk
Two tbl oil
One egg
I heated waffle iron and startedcooking
Meantime I made gravy
I melted one cube butter
Mix equal flour and make a ru. Fry flour let it bubble then mix in heavy cream adding seasoning salt peppar Cayenne Red pepper flake onion powder
Stir until thicken
Maybe needed some chicken stock if too thick.
Top waffle with syrup put chicken on top then gravy
